Seared Scallops | Recipe by Caviar King

  1. Remove the small side muscle from the scallops and discard. Rinse the scallop with cold water and thoroughly pat dry. Season with pepper and salt.

  2. Put 2 teaspoons each of unsalted butter and olive oil into a sauté pan on high heat.

  3. When the fat begins to smoke gently add the scallops one by one, making sure they do not touch each other.

  4. Sear the scallops for about 1 - 2 minutes on each side. They should have a golden crust on each side but still retain a translucent center.

  5. Serve immediately.
