Directions:
- Remove the small side muscle from the scallops and discard. Rinse the scallop with cold water and thoroughly pat dry. Season with pepper and salt.
- Put 2 teaspoons each of unsalted butter and olive oil into a sauté pan on high heat.
- When the fat begins to smoke gently add the scallops one by one, making sure they do not touch each other.
- Sear the scallops for about 1 - 2 minutes on each side. They should have a golden crust on each side but still retain a translucent center.
- Serve immediately.
